actually I was thinking bacon soup too... not to despair.
Dice and Saute bacon
add Diced onion
make the onion translucent
add diced green onion.
add some diced celery and carrot
move all the stuff to one side of the pan and tilt it to the opposite, take a paper towel and blot off some of the excess grease. Use a clean sponge if you are a hippy.
add small amount of flour [4 tablespoons]
add some pepper to your roux [other spices too!]
add small amount of milk/cream to make a paste. Let milk/flour mixture cook but not burn [about 2 minutes].
add more cream
Add cubed/shredded cheddar--do not boil!
add some chicken stock to dilute 'sauce' into basic soup and let it thicken.
there you have a bacon cheddar soup.
