DeVotchKa is a cool indie band with a unique sound.

It's almost like you were paid to shill this. The writer of the article certainly was.
Here's my take: DeVotchKa has a lot of instruments in it, but beyond the drums, singing, and guitar, none of them add anything fundamental. The melody of the single is kind of bland, and if it didn't have a catchy rhythm and singer, it wouldn't really have much at all. There is no build to a climax, just a fairly mundane verse-chorus set-up.
That said, if you like this kind of music, which is pretty mainstream indie, you can definitely do better than DeVotchka. Sun Kil Moon is a good place to start. A lot of people like The Magnetic Fields, but I haven't really listened to them yet. Probably the best indie groups these days known for their intense depth of sound, something that seems important to you, are The Arcade Fire and Broken Social Scene, although I figure you've probably heard about them already.
