Right, Thursday night I have to cook for weif, friend and friend's stupid smug biatch wife (whom also happens to be a vegetarian, although she's smug about this too).
Now I hate her more than words can say, but I wish to express my hate by cooking her some genuinely tasty grub without animal flesh in it.
Trouble is, I've never cooked really good vegetarian food so has anyone got any recipes?

Get:
8 slices of thinly sliced vegetarian.
4 slices of cheese--your choice
1/4 onion
1/4 green pepper
1 long roll
Pan fry the slices of vegetarian with the onions and peppers.
About 1 minute before its done throw on the cheese.
Slide the whole mess onto the roll.
ENJOY!

Look into some Indian cookbooks too, lots of vegetarian type stuff there, or as you're a Limey, just call up a take-away early in the day. Get out the pots and pans, put everything you ordered in an appropriate pan and set on stove so it smells like you cooked in the house and serve.

Take two avocados (they should be dark green, and just slightly mushy), cut them in half, pop out the pit and scoop out the flesh with a spoon (easier than trying to peel the slippery things, and you lose less flesh - both from you and the avocado).
Crush two or three (or eight or sixteen) cloves of garlic (I use about four), and throw that on the avocado.
Squeeze the heck out of about half a lemon (or about all of a lime), and then go by taste (it's easy to overdo the lemon part). Then mash all this together until it's smooth.
Chop up a small onion and throw it in (it's easy to over-onion this recipe), along with about half a normal size tomato, (I like to have decent size chunks of onion and tomato, just for texture. But I know there are people out there who are going to puree it like baby food anyway. Don't. For me, okay?).
Give it a little more mashing and stirring, then cover the bowl (did I mention to do this in a bowl? If not, scrape everything off the counter into a bowl) and put it in the fridge. If you give it about an hour, the garlic will seep through and blend the flavors together. If you have a problem with the top layer discoloring, apparently putting one of the pits on top is supposed to help. It never works for me, though.

If you're near any organic grocery store, stop in and you're bound to run into a few vegetarians working there. Not only do you get a simple yet tasty recipe , they'll help you pick out the ingredients, place it in your cart, and ring you up. What could be easier? |

LK's gaucomole is quite well done considering his criminal kid canadiance! [too much garlick though] and honestly you have to understand that the avocadoe oxidizes, so a layer of plastic wrap on it will let it keep much longer.
The lime/lemon juice also helps prevent oxidization you can skip it though--and I would use half a small white onion diced finely. Add some corriander leaves [cillantro] and only use like 3 garlic cloves.
The problem with cooking indian food is that you need lots of particular spices you can't really find in the average store, so go to a paki-mart™ and look around for food stuffs, try a few and in a few years you can make good indian food.
Did I mention that pasta sauce and pasta is veggie friendly? well the pasta has eggs in it, but you can find egg-free noodles just about anywhere.
also baked potatoes with cheese and stuff is good as are roast garlics and portabella mushrooms with fancy goat cheese and parsely.

Use this stuff in anything you would normally put ground beef in. With seasoning, it's not too bad and it tastes ALMOST like real meat.
They also have fake chicken, fake hotdogs, fake corndogs, fake sausage and fake hamburger patties.
What ever it is that you are making for the rest, you should be able to make the Veg equivilant using that stuff.

o.k. actually i 'm a veg, but a veg bachelor so i eat a lot of sandwhiches and cereal.
but one thing i like to make, that i like to eat and is easy, is a pasta thing.
Except i don't use measurements.
First use brown rice pasta. It's better than wheat (most people eat too much wheat any way). Get a macaroni shape. It takes longer to cook, be ready for that. Depending on the thickness, it can take like almost twice as long.
In another, say a large pot, fill 2/3 with water, boil. Put in pesto, which is ground up basil, olive oil and other stuff. Keep adding it until you can taste it pretty well in the water. Then a full handful of chopped sundried tomatoes. Buy them chopped, because they are kind of like leather. They swell up in the water, so you don't need as much as you think. Then a type of soy sauce called 'Bragg all purpose seasoning' - you may have to visit a health food store to find it. But it is good stuff, you will want use it in other things later. I put in enough till the now green water gets kind of a light brown tinge.
Also put in 3 or 4 table spoons of a light oil, unless the pesto you bought was pretty oily. When i make pesto in the autumn, i don't put nearly as much oil in it as the commercial stuff.
So that's about it. It's better if you make it the day before, i would strongly recommend that. You can mix it altogether after everything is cooked up, or mix it together the day of.
Here's a salad idea. Chop up peppers. Green, red, yellow. put in sliced black olives. Chopped sweet onion. And then crumble feta cheese in it. (personally i do not like goat feta). Again, better the day before.

Crush alot of garlic--don't stop at one bulb--and then crush a little more.
Get a stick of butter.
Get some milk--whole is best.
Boil the potaos until they are cooked all the way through.
Drain them of the water.
Throw in the garlic and the butter, and a little of the milk.
Start mashing the fuk out of them taters.
Add milk as neccessary to get the supah smoovness.
Put said mashed potaos into a nice casserole dish and bake until the top is just golden.
Serve on top a grilled pork chop.

Make this. Nothing says hate like Haggis.
1 sheep's pluck (stomach bag)
2 lb.. dry oatmeal
1 lb. suet
1 lb. lamb's liver
2 1/2 cups stock
1 large chopped onion
1/2 tsp. cayenne pepper, Jamaica pepper and salt
Boil liver and parboil the onion, then mince them together. Lightly brown the oatmeal. Mix all ingredients together. Fill the sheep's pluck with the mixture pressing it down to remove all the air, and sew up securely. Prick the haggis in several places so that it does not burst. Place haggis in boiling water and boil slowly for 4-5 hours. Serves approximately 12.
If she complains, tell her she can pick out the onions.

I know this sounds pretty boring but its quick, easy, and good...
Tofu in Lemon Butter Sauce
1 1/2 c butter
1 1/2 tbs lemon juice
1 tsp salt
1/8 tsp black pepper
1/2 tsp paprika
1 tsp crushed red peppers
1 tbs tabasco sauce
5 garlic cloves (finely chopped/crushed)
1c sliced mushrooms (I prefer canned but then again I like everything out of a can)
1 tbs capers - OPTIONAL (I say no)
3 (12oz) pkgs of EXTRA SUPER FIRM tofu sliced into strips
I like to marinate the tofu overnight in italian dressing...gives it a little tang.
Combine all ingredients but the tofu in a skillet over medium heat and bring to a boil.
Add tofu (but not the dressing) and simmer for 15-20 minutes turning every few minutes. Careful not to let it burn!
Spice to taste...that usually means more garlic and heat but that's just me.
Serve over rice with a tomato cucumber salad (tomatoes, cucumbers, one red onion, and feta cheese mixed with balsamic vinegar, oil, salt, pepper, powdered garlic to taste).
And don't forget some sort of bread...mmm, garlic.
Good Luck!
Oh and if she's vegan then you can use margarine or another substitute but you have to really watch that it doesn't burn...otherwise REAL BUTTER.
