As y 'all know, in addition to food tasting good, ease in preparation and as few dirty dishes possible are the goals.
This year I found a rotisserie setup for my gas grill at a garage sale. Horray for more dirty-dish less recipes!
So the other day, I prepared a wonderful dinner, roatisserie chicken, hommemade 'tater salad & corn on the cob.
Net- 1 easy-to clean pot.
I cooked the chicken on the rotisserie, first rubbing it inside & out with fresh basil, sage & rosemary (from my garden). I then dumped the extra herbs inside, added some honey and put the bird on the spit for awhile (no, I did nto time it- never do).
Meanwhile I prepared the other side dishes....peeled & cut up taters, placed them in a pot to boil. Shucked the corn (from a local farm stand). When the water began to boil, I threw in a couple of eggs and did time them for 10 minutes. Scooped out eggs when finished and cold rinsed them. Continued to cook taters 'till they were soft and then threw the corn in on top for a quick boil. removed corn for serviing, then rinsed the cooked taters in cold H2O. Made tater salad w/ mayo, mustard, hardboiled eggs, red hot, sweet pickle relish.
