A wonerfull Thai Green Coconut curry recipe i picked up when i used to werk as a cook. Theres a few things that can be substituted throughout, I'll make note of it as i go. This is based loosely upon a traditional curry dish. Kind of a french fusion variation of it

2 T Minced Shallots
1 T Minced Garlic
Green Curry paste (to taste)
1/2 - 1 cup Coconut milk
1/3 cup Diced Jack Fruit
Brocoli Florets
Juliened Red Pepper
Sliced Zuchini
8-12 prawns
olive oil

Makes One large Sized meal. recipe can be modified as needed to serve more or less

1. Saute Garlic, shallots, Green Curry paste( i use anywhere from a 1 t to 1 T depending on how spicy i want it), Jack fruit and prawns in pan. remeber the curry releases more flavour as it is sauted. Experiment to find your preference
2. Deglaze with cocconut milk. Add the coconut milk slowly.
3. Add broccoli, Red Pepper and zuchini
4. Simmer till the coconut milk reduces to a nice consistancy
5. Add pasta or rice, Toss together and serve.

you can reduce the coconut milk sauce mixture before adding the vegtables. if you dont want the vegtables cooked as much.

Serve with rice or pasta of your Choice

Heres the substitutions:
Jack fruit can be substituted with Star fruit for a great presentation. But any fairly Firm Sweet fruit will work. Pineapple is pretty Ghetto and not normally reccomended
Prawns can be exchanged for chicken or Extra firm tofu cubes. Add all of them if you want
The vegtables can be replaced with any to you preference. The combo i use is tasty and give a great contrast in color to provide nice presentation.

Why "dragon's breath"? Is it hot? If so, got anything like this without coconut milk? Eating that shit's like skimming the fat off a dead whale and eating it.

Its called dragons breath cause thats the name i learned it as.

I know a few others, but they require alot more prep. let me dig around in the old noodle fer a bit and see if i can remember all the steps to some other curries that dont involve coconut milk.

As far as its spice goes, as little as 1 t gives a righteous flavour. As much as 1 T will make yer mouth liven right up as you begin to sweat.
I love coconut milk based curries, but that doesnt exclude anyone from ejoying their own preferences.

EDIT: i havent tried the fat off of a dead wahle, is it better when they have beached themselves. or do i need a harpoon to get the best results

I'll acknowledge another problem with coconut milk, and that's that once you've partially digested it, it tastes like a mixture of soap and vomit when you burp it up.

If you've ever eaten old trail mix, and enjoyed the delightful ex-coconut soap shavings, it's like that, only spicier, and with more vomit pizzazz.

even though i called you a pussy before, coconut milk is relatively horrible. it's like a taste/stench that you can't escape. when i'm cooking and something calls for it, i usually leave it out and it tastes better.

unless, you know, it needs it.
