OK, corned beef here is usually silverside, and comes packed in a plastic bag with the brine. How do you prepare it for a dry cure, and what do you use to cure it?

I'm taking some extra steps.
You're supposed to be able to dry-cure an unsalted brisket(non-corned beef) as long as it's less than two inches thick (just the flat) with the fat cap trimmed to less than 18"
I'm taking a corned beef brisket (already cured) and soaking it in water for four hours, (changing the water twice an hour) to get some of the salt out, I'm not sure about the need to soak it first.
Cover in a mix of equal parts freshly cracked peppercorns, brown sugar and corriander (1/4 cup), a few tablespoons of garlic powder and meat tenderizer and a couple of teaspoons of salt.
(You might try skipping the soaking and just leave out the salt.
I think the spices would still circulate into the meat.)
Place in plastic bag and let sit in fridge for at least three days, (flipping and shaking the bags twice a day to allow for even curing)
Then wash off the meat thoroughly and soak for half an hour, change the water and soak for another half hour.
Recoat the meat with three tablespoons cracked black pepper, one tablespoon corriander and a teaspoon of garlic powder and smoke to an internal temp of 160f
Some people just take a corned beef brisket, do the hour-long soak, coat it with the second mix of seasoning and it seems like it's just as good.

I had to plane everything down to 1/2" first, so right off the bat I threw away about $40 worth of wood.
Man, that ALWAYS hurts. :(

I actually know what that entails, having been a cabinet maker in one of my lives. meepity. Too bad you don't have a hampster for all the wood shavings. That is some commitment. Now I gotta start putting some meep together.
