Marinades, please!

My boss is hosting a BBQ in a couple of weeks and everyone has to bring some food. Not being much of a cook myself, I thought I'd just do some tasty chicken limbs in the oven and bring them cold.

I'm sure that Swarmers know some great marinades for such an occasion, so please share and help a Lefferz out.

If your just looking for something to buy off the shelf,and have Goya products available in your neck of the woods,the pic below is some pretty good meep.I put chicken in a gallon sized freezer bag and dump a bottle or two of this in.(let it soak for at least 24 hours for best results.)

You can make your own pretty easily (wotak has a recipe somewhere), You can always use italian dressing, or you can use a store bought marinade. If you can find it, Moore's is the best.

Kraft has got a Fat free Italian that makes a really good marinade. I usually enhance with some garlic powder, Italian seasonings, a splash of vinegar and some olive oil.Can't miss.

Many of the best barbecue marinades seem to involve beer, but since y'all don't have actual beer there forget it.

Here's one I had bookmarked from a previous foray that looks interesting with the vermouth, got good reviews on the site:

* 1 1/2 cups vegetable oil
* 3/4 cup soy sauce
* 1/2 cup Worcestershire sauce
* 1/2 cup red wine vinegar
* 1/3 cup lemon juice
* 2 tablespoons dry mustard
* 1 teaspoon salt
* 1 tablespoon black pepper
* 1 1/2 teaspoons finely minced fresh parsley

DIRECTIONS 1. In a medium bowl, mix together oil, soy sauce, Worcestershire sauce, wine vinegar, and lemon juice. Stir in mustard powder, salt, pepper, and parsley. Use to marinate chicken before cooking as desired. The longer you marinate, the more flavor it will have.

I mentioned in text but deleted in recipe, I think it was 1/2 cup vermouth, translate to metric youssef.

Also here's one called marinade.com, there's 145 (I counted) marinades listed for chicken alone. You click, you pick. Thanks for the invite into your process but it all depends on what you want. You wanna stand out or have your food blend with the rest? http://www.marinade.com/recipes

You might just try a good chicken rub. Marinade sometimes cover the natural flavors while rubs actually enhance them. Plus its easier.

I use Salt pepper Garlic powder Lemon Pepper brown sugar cayenne paprika

Make a small mix till you like the blend then make more and rub it into the chicken, let it sit for awhile in the fridge before cooking. Take out 30 minutes before cooking to let the meat relax then cook. You can also baste with a little bbq towards the end.

This same stuff works really well with a tablespoon of Hoisin added and a bit of red curry paste with beef. Cut the beef into strips and weave it onto skewers and toss it onto the fire until browned. People will ask you for weeks what the heck it was....

Ingredients:

1 cup mayonnaise 1 cup cider vinegar 1 tablespoon lemon juice 1 1/2 tablespoons black pepper 1/2 teaspoon salt 1/4 teaspoon cayenne

Mix ingredients together and refrigerate for at least 8 hours before using. Brush lightly over chicken, turkey or pork during the last few minutes of grilling. This barbecue sauce is also great as a dipping sauce so set some aside before you start grilling to serve on the table.
